

- Brown beef in pan with oil then set aside add salt.
- Sautee onions and garlic
- Brown celery root and carrots
- Add in Italian seasoning
- Add in beef stock and beef
- Add in tomatoes or tomato paste
- Bring to a boil then either simmer in pan or crockpot until beef is tender and stew is thick. I usually do around 3-4 hours in crockpot, may be less in pan. Taste for salt.
- Add almond flour if thicker stew is desired.
- Add olive oil
- This recipe makes 12 cups/servings.

1/2 cup almond flour
2 lbs grass fed beef
1 small onion
1 large clove of garlic
27 grams Parmesan (grated)
2 eggs
Spices (Italian seasoning, basil, salt, pepper)
1. Mix ingredients until incorporated.
2. Brown in a pan with olive oil on all sides.
3. Bake at 350 degrees in an oven 20-30 minutes on parchment paper.
