  • Brown beef in pan with oil then set aside add salt.
  • Sautee onions and garlic
  • Brown celery root and carrots
  • Add in Italian seasoning
  • Add in beef stock and beef
  • Add in tomatoes or tomato paste
  • Bring to a boil then either simmer in pan or crockpot until beef is tender and stew is thick. I usually do around 3-4 hours in crockpot, may be less in pan. Taste for salt.
  • Add almond flour if thicker stew is desired.
  • Add olive oil
  • This recipe makes 12 cups/servings.

Keto – oven roasted Parmesan cauliflower with mozzarella

Keto friendly chili

Makes 12 meatballs

1/2 cup almond flour
2 lbs grass fed beef
1 small onion
1 large clove of garlic
27 grams Parmesan (grated)
2 eggs
Spices (Italian seasoning, basil, salt, pepper)

1. Mix ingredients until incorporated.
2. Brown in a pan with olive oil on all sides.
3. Bake at 350 degrees in an oven 20-30 minutes on parchment paper.
